Gingerbread Pancakes

Yes.
They were as delicious as they look in the photograph.  My family went nuts for these simple little pancakes…and your family will too.
I found this method on Pinterest (of course!) where you take a box of cake mix and turn it into pancake batter.  I was totally intrigued!  I used a box of spice cake mix and added ground ginger but you could use red velvet cake mix, lemon cake mix, chocolate cake mix, carrot cake mix…the possibilities are endless!  This is such a clever method!

Shopping List
1 box of spice cake mix
1 tablespoon ground ginger (only if you’re making gingerbread pancakes)
1/2 cup flour
2 eggs
2 cups milk
1/4 cup vegetable oil

Preheat your griddle to medium-high.

Combine all ingredients in a large mixing bowl with a whisk.

Ladle pancake batter on to greased (I used Pam) griddle and let sit until you see bubbles rise up.  Once they get bubbly, flip them over and cook the other side.  It only takes about 4 minutes to cook them total.

Keep ladling and flipping your pancakes until the batter is gone.  This recipe yields about 18 pancakes.

Top pancakes with your favorite maple syrup.

It’s simple methods like this one that make breakfast more fun, more special and so much simpler for busy moms.

    I'm going to do these with the red velvet for the day our elf on the shelf comes to visit after Thanksgiving! I made your apple spice cobbler on Sunday and it was my son's favorite dessert ever!
