Meal Planning Monday #20

Happy Monday!  My sweet boy celebrated his birthday over the weekend, so we had a great one!  Now…back to the week.  Sigh.  We knew Monday was coming.  It seems to do that every seven days.
We’re making brisket tonight with smashed potatoes and then using the leftovers for tomorrow night’s meal!  Let the slow cooker do all the work on Day 1 and you’ll be covered on Day 2 as well!  Make sure you buy a bigger brisket than normal so that you have leftovers to use! (Buy a 4 to 5 pound one to get two meals worth of brisket.)
If you’re using your leftover brisket from the night before, then all you need to do is wrap it up in a tortilla with lots of salsa and your other favorite toppings.  Easy!  For the complete Brisket Taco recipe, click here.
My Mac and Trees can be made with bacon or vegetarian instead!  Such a simple way to get your kiddos eating their broccoli!
Last week, Andrea made my Sausage and Tortellini Soup for her family…and let’s just say, sweet Miss Griffin loved it…
Such a sweetie!!
Pesto Chicken Stuffed Bell Peppers look fancy…but they’re so simple!  Trust me, they’re fancy without the fuss!
Almond lovers rejoice!  My Almond with Strawberry Jam Bundt Cake will knock your socks off!
And we’re getting ready for Valentine’s Day over at my house…my Chocolate Covered Cherry Whoopie Pies are perfect for your sweetheart :).  Every time I eat these, I think of my sweet parents.
Tab’s Guacamole is perfect for your football watching!  Actually…it’s perfect all the time!  My very favorite guacamole is on the menu this week as our bonus recipe!  Love, love, love!
Happy Monday!

Hi Shay! For some reason I can never post a comment on your other blog but I can on this one. Not sure why! Anyway, I loved Smith's party, my son turned 16 yesterday and I remembered all the cute theme parties I once did for him. At 16 he's not having any of that anymore – boo! So much fun and helps us mamas deal with the reality that our babies are growing up! I enjoy your blogs so much – God bless!
