First Day of School Menu

Now that we have a kindergartner, I’m super excited to share my Back to School Menu with you!  I picked things that kids will love but won’t stress a busy mom out.  Everything is made in advance, simple and perfect for the first day of school.  Enjoy!
We’re going to make our traditional back to school breakfast my Sausage Crescent Breakfast Casserole.  I love this because I can assemble it the night before and then just bake it the morning of school. Plus, it’s really, really yummy!
I’ve decided that Smith and I will make my Butterscotch Maple No Bake Cookies during the afternoon and have them ready for Kensington when she gets home.  We love these cookies.  Like seriously love, love, love them!
Andrea’s Pulled Pork is the perfect back to school supper!  You stick the 4 ingredients in the slow cooker in the morning before the kids head off and then when it’s dinner time, you’re good to go.  Not only is this like the simplest recipe in the entire world, it’s realllllly yummy too!  I think we’re going to make this our traditional back to school dinner!
For a simple side to my pork, I’m going to serve my Creamy Bacon and Pea Pasta Salad.  This recipe is served cold, so you can make it the day before, the morning of or that afternoon.  The creamy pasta goes so well with the yummy pork!
And for a special little after dinner treat, I’m going to make simple Apple Pie Ice Cream Sandwiches for dessert…
I hope to make so many fun memories and start some great traditions now that we have an official school kid.   If you make something special to eat for the first day of school, I’d love to hear about it!

    We always do a special dinner the night before school starts and have some type of fun dessert. We also have a special book that gets read to each child before bed. Back when my oldest started kindergarten I purchased a back-to-school/night before school themed book. We read it as he was tucked into bed. My daughter started kindergarten two years later, and my youngest son started two years after her, so the book came back out for each of them. The funny thing is that they still ask me to read the book each year on the night before school…and this year they'll be in 4th, 6th and 8th! I' won't tell my 8th grader that I shared that with anyone ? Happy back to school and enjoy making new traditions with your family!

    Last year (Kindergarten) I started the tradition of getting a big cookie cake with Happy First Day of School written on it. I think that I will keep it up, unless someone posts an idea I like better! My daughter loved it!

    I may not have time to bake the sausage casserole in the mornings before school (we're early early risers and go-ers), but that looks delicious for a Saturday/Sunday morning breakfast at my house. Thanks for sharing your recipes as always Shay!

    I am super impressed that you make all of this for the first day. Those cookies look delicious and I cannot wait to try that pork. We LOVE BBQ – just posted our favorite BBQ recipe on my blog. Hope she has a terrific first day.

    I started making chocolate chip cookies in the afternoon of the first day of school, so they'd be warm out of the oven when the kids got home. Started this the afternoon of the first day of Kindergarten for our oldest son, and continued it through the last first day of the fourth year of college for the youngest. (For college, I sent them off with a container of chocolate chip
    cookies to share with friends after the first day of classes.) That was 20 years of first-day-of-school cookie baking, and it went by in a blink!

    For the past five years (starting with pre-K for the oldest), I've always made butterscotch monkey bread, served with fresh fruit and hot chocolate, for the first day of school. I coat the bread in cinnamon sugar the night before, and then just whip up the butterscotch sauce in the morning. But I might need to add that sausage casserole as a side this year- yum! I add a note and small treat to the first day of school lunch (candy and desserts are discouraged at our school for lunch, which I definitely agree with, but I love adding a treat for the first day and special holidays). Then we usually go out for ice cream after dinner. This will be my first year home with the kids after school- usually I'm working, but that's about to change!- so I'm excited about new homework traditions and after school snacks.

    The night before, we read back to school books, pack lunches, and pick out outfits together (I typically have several for them to choose from). I set aside at least 15 minutes to get good pictures before leaving in the morning- no rushing pictures for this mama! First day of school pictures are some of my favorites from all year! šŸ™‚ We do get up much earlier than usual that first day to fit in the special breakfast, pictures, and a walk to school, but everyone is so excited, it's never been a problem!
