Bar 79: Carrot Cake Neiman Marcus Bars

It’s not Easter if we’re not eating carrot cake.  
Carrot cake with a nice cream cheese frosting is a staple at our Easter lunch every single year.  So needless to say, a Carrot Cake bar was in order.  
If you haven’t made a Neiman Marcus Bar, you should.  The cake part is on bottom and the cream cheese frosting layer is on top…in my opinion, they are the perfect bars.
Easter is two weeks from today!  Maybe this year, you make one of these yummy bars?  Your family and friends will love it!
 Shopping List
1 box of carrot cake mix
4 eggs
1/2 cup butter, melted
1 box of powdered sugar (about 4 cups)
1 (8 oz) package of cream cheese, softened

Preheat oven to 350 degrees.

Grease (I use Pam) a 9×13 inch baking dish.

In a large mixing bowl, combine cake mix, 2 eggs and melted butter.  Spread in bottom of pan.

In a second bowl, beat with electric mixer, powdered sugar, 2 more eggs and cream cheese until smooth.  Spread on top of crust mixture.

Bake 35-40 minutes until edges are brown and center set (it will still be slightly wobbly in the middle).

Cool on counter 30 minutes, then refrigerate 2 hours up to 2 days.

If you can’t find a box of carrot cake mix (which is usually easy to find), then substitute with a box of spice cake mix and then grate a cup of carrot into the mix before beginning.

    I love your your Neman Marcus bars, but I found that 4 cups of powder sugar is to sweet for us, so I was doing only one cup and it was just perfect for our taste. I thought I would share!!! Happy Easter!!
