Happy Monday, friends!

If you don’t know quite what to make today, no worries…I have you covered.  Grab your coffee (or tea!), a pad and pen and jot down my easy meal planning for the week.  Everything is delicious and yet simple enough to pull together on a busy weeknight.

Crispy Chicken with Poblano Sauce

We love my Crispy Chicken with Poblano Sauce.  If you don’t think your kids will love the sauce, then just make some for you.  They can enjoy their crispy chicken with ketchup 🙂 .

Roasted Garlic & Tomato Pasta

My Roasted Garlic & Tomato Pasta will have you never reaching for the jarred sauce again.

Pineapple Teriyaki Salmon

Mmmmmm…Pineapple Teriyaki Salmon.  Delish!

Skillet Tacos

Thursdays call for very quick and very simple (they also call for Scandal too!!).  My Skillet Tacos can be whipped up in minutes.  And bonus, you can use ground beef, turkey or chicken.  Bam.

Sheet Tray Supper

And finally, wrap up your week with my Sheet Tray Supper of Italian Sausage & Eggplant!  This is the world’s simplest supper to make…and clean up.  Throw it in the oven and then enjoy it on the patio.  A great way to end your week!

    The amount of tacos I’ve been chowing down on lately has been nothing short of embarrassing.. and amazing. Thanks for yet another taco recipe. I loved your BBQ/pineapple tacos too. Incredible. Since I’m missing Texas these days, I whipped up some breakfast tacos this weekend, and thought I’d pass along the recipe 🙂

    About those Lemon Oreo Cheesecake Bars, did you know Oreo makes a Lemon Oreo?! I used them tonight to make my mother a lemon cheesecake for her birthday. They make an awesome crust!!!

    I really have never enjoyed cooking, so I am terrible at it. But my husband is a total foodie – go figure. In my attempt to be a better wife, I have been making two of your recipes for him every week since January. He has loved them all!! And they are all so simple! He really loved the sheet tray dinner. I am making the pineapple tacos this week! He has enjoyed your variety of Mexican dishes too! Thanks for making cooking much more simple for me!!
