Meal Planning Monday

Meal Planning Monday

Happy Monday!

I have five simple suppers, a sweet treat and lunch idea too.

Grab your paper and pen and get ready to jot down your meals for the week!

Sausage & Kale Risotto

Sausage & Kale Risotto is one of my favorite things to make during spring.  It’s cozy and comforting while being light at the same time.  Plus, risotto is a cinch to pull together!

Greek Tacos

Want a fun spin on Taco Tuesday?  Try my Greek Tacos!!  It’s also a great way to incorporate more ground turkey into your diet.

Chicken & Wild Rice Soup

My Chicken & Wild Rice Soup is really easy to whip up on a busy weeknight and always a crowd pleaser.

Meatball Sub

When was the last time you had a Meatball Sub for supper?  How can your day not end on a good note with one of these?!

Spinach & Chicken Enchiladas

Wrap up your week with my Spinach Chicken Enchiladas.  Don’t they look so good?!

And for something sweet this week…

Blackberry Bundt Cake

…my Blackberry Bundt Cake.

And what about lunch?  I love making this at the beginning of the week and enjoying it for lunch…

BBQ Ranch Pasta Salad

…my BBQ Ranch Pasta Salad.

Have a wonderful start to your week!!  Sending much love from my home to yours!

The meatball sub is like Subway (my favourite) at home, without all the sodium!

Looks good! Do you ever do a link up for MPM? I’m always curious about what people around the country eat for dinner!

I made the sausage and kale risotto last night and it was delicious! It was so yummy, I had it again for lunch today! Thank you so much for sharing! 🙂

We had leftover chicken at home so I made the greek tacos last night and ohhh. emmm. geee! Delish! Instead of hummus, I made whipped feta and it was just as delicious. What a simple and quick way to make dinner. Thanks Shay!
