I mean…I probably have like 12 different versions of a lemon bar. But what’s one more, right? They’re just my FAVORITE little sweet treat to make this time of year. This version kind of has a lemon curd topping. It was easy, and they were delicious. Enough said, right?
Shopping List 1 box of yellow cake mix
1/2 cup butter, melted
2 eggs, whole plus another 6 egg yolks
2 (14 oz) cans of sweetened condensed milk
the zest and juice of one large lemon (about 2 to 3 tablespoons of each)
Preheat oven to 350 degrees.
Grease (I use Pam) a 9×13 baking dish. Set aside
In your mixing bowl, combine your dry cake mix, melted butter and 2 whole eggs with a wooden spoon. Press this mixture across the bottom of your prepared baking dish as your “crust” layer. Pop this in the oven and bake 20 minutes. Remove from oven and allow it to cool completely.
In a second mixing bowl, whisk together your 2 cans of sweetened condensed milk with your 6 egg yolks, zest and juice. Spread this layer over your crust layer in your pan.
Pop it back in the oven and bake an additional 20 to 25 minutes or until very lightly browned and mostly set in the center (it will still be a little wobbly). Remove from oven and let cool one hour on kitchen counter before slicing and serving.
