Grab your paper and pen because it’s time to jot down your grocery list for the week.  Today, Meatless Monday, Taco Tuesday, Waffle Wednesday, Turkey Thursday and Burger Friday.


Lemon Parm Pasta

My Lemon Parm Pasta is just what you need for a Meatless Monday.  And listen, if you’re not into this whole meat-free thing, then throw a few grilled shrimp up on top and you have yourself a delightfully delicious variation!

Sheet Tray Supper: Chicken Fajita Tacos

Our Taco Tuesday has a twist…it’s my Sheet Tray Fajita Tacos!  You throw everything on the tray, pop it in the oven and forget about it.  Dinner could not be simpler (or easier to clean up!).

Pizza Waffles

Your kiddos are going to flip over my Pizza Waffles!  These babies are loaded with chopped pepperoni and cheese and then topped with pizza sauce.  They’re outrageously delicious!

Green Chile Turkey over Quinoa

Mmmmmm…Green Chile Turkey over Quinoa for our Turkey Thursday!

Cheddar Beer Burgers

And Fridays in the summer must have a burger, so our Cheddar Beer Burgers should be on your menu at the end of this week.

Dreamsicle Bars.  It tastes just like the ice cream bars you had as a kid.

    On Saturday we came home from playing a double header baseball game where we sat for many hours in the hot sun watching my son’s team play. Less we forget also watching him play Friday night. 3 games in 19 hours. I was toast. SO little interest in cooking, but also so little interest in ordering take out. “OH!” I thought, “I saw sheet pan fajita something or other on Mix and Match Mama. I bet I could at least cut up some things before falling back on the couch in a heap of tiredness.” DONE AND DONE! Worked out perfect! Thanks for sharing all your ideas – big and small. This easy one fit the bill for us this weekend!

    Last week we tried the Cajun Shrimp Pasta and loved it. I mean absolutely devoured it! I like the parmesan variety today – might have to try it out too!
