Meal Planning Monday

It’s the first day of school.

I don’t know about you…but I’m always a mix of emotions on this day.  I’m sad to see summer end and most importantly all of that extra time with my kiddos…but I’m also happy because today ushers in the beginning of our favorite season and all of the exciting things that are coming up.

We’ll all go together to drop them off, I’ll meet my girlfriends for breakfast and then I think I might take the little two to Hobby Lobby.  Because looking at pumpkins always cheers me up 🙂 .

Here’s my Meal Planning Monday for the week.  Let’s be honest…the first week of school requires no-brainer dinners that the whole family will enjoy.

Cheesy Turkey Enchiladas

My Cheesy Turkey Enchiladas are always a hit at my house! We use ground turkey but you most certainly can swap it for ground beef.

Beef Stroganoff Meatballs

We make these Beef Stroganoff Meatballs a lot at our house!  My kiddos love any type of meatball and Andrew and I are big stroganoff fans…so needless to say, it’s always a hit at suppertime.

Orange Marmalade Chicken Sandwiches

Have you ever made my Orange Marmalade Chicken Sandwiches?  You should!

Pork and Beans over Rice

My Pork & Beans over Rice is a quick little slow cooker meal.  Nothing makes my day simpler than pulling out my slow cooker.

Apple Cheddar Turkey Burgers

My Apple Cheddar Turkey Burgers are full of flavor…and perfect for transitioning from summer food to fall.

And this week, I thought I’d share a bundt cake that you might want to try…

Peanut Butter Banana Bundt

…my Peanut Butter & Banana Bundt Cake always makes me think of this back to school time of year.

    My first born started pre-k last week. 😭 My husband knew just what I needed – a trip to Hobby Lobby. I bought a couple things and put out my Fall🎃 stuff while my little guy was in school. I needed the distraction! Hope you have a great day!

    Yum! I am planning on several of these this week- thanks! Love your recipes, and just have one question… any suggestions on what you do as sides ? I do a lot of steamed broccoli, and always add a starch, but that’s my real struggle . The sides 🙂

      We have either a salad or a roasted vegetable every night. It’s just the easiest thing to do!

    Can’t wait to see your first day photos! It’s first day for us too but school was cancelled due to Austin floods (which aren’t really happening but it’s good to be safe). Thanks for easy dinner ideas – I actually had out your cookbook yesterday and had the orange marmalade chicken sandwiches (with Hawaiian buns) picked out for the week already! 👍

    I made your Penne and Smoke Sausage Bake last night for my family and it was a huge success! I used a spicier jalapeno and cheddar sausage from Market Street and it gave it the perfect amount of spice! I’m really looking forward to leftovers today at lunch! 🙂

    Those little apple pies are adorable!! You should bring those to church sometime (so I don’t have to make my own!). Haha! Have fun at Hobby Lobby! I was just there the other day and spent a solid hour and a half shopping. 😉

    I know what I’m cooking this week! Have fun at hobby lobby — Fall is the very best season for shopping (the clothes, the pumpkin scented things, the shoes … Just love it!) Hope your kiddos had a great first day back!

    I’ve been meaning to tell you this……I was not at home on the Sunday when you were on QVC…. so I recorded it. Was finally able to watch it on Fri nite…… you were so darned cute on there!!! Good job. 😁💜
