Narci’s Winning Baked Potato Casserole Recipe!

Every Christmas, I host my annual recipe exchange.  Every year, we have a theme and then after we eat, we vote on the BEST recipe from the night.  In the past, recipes like Sheaffer’s Pineapple Casserole and Sheaffer’s Cream Cheese Caramel Surprise have won.  (Side note: Sheaffer had a HUGE target on her back this year. Ha!)  This year, the theme was “cook’s choice” and you could bring anything you wanted.  We had dips, appetizers, a soup, a breakfast recipe, dessert and even a cocktail.  But the winning recipe?  Was a casserole.  A casserole that would be perfect for you to make this holiday season.  Our big winner was Narci with her Baked Potato Casserole

I snapped this pic right before we devoured it that night.  This one was so good…and EASY!  You will love it too!!

Shopping List
3 pkgs Instant mashed potatoes
1 (1 oz) pkg dry ranch dressing mix
1 (16 oz) container of sour cream
2 cups shredded cheddar cheese
1 pkg of bacon, cooked to crisp and crumbled

Preheat oven to 350 degrees.

Grease a 9×13 baking dish.  Set aside.

Prepare bacon and mashed potatoes as instructed on packages. Crumble bacon and set aside. Mix mashed potatoes, ranch dressing mix, sour cream, 2 cups of cheddar cheese, and crumbled bacon together in a mixing bowl.  Spoon into prepared pan.   Bake for 20-25 minutes or until heated through.

That’s it!  And it’s winning 🙂 .

And this is Narci and me 🙂 .  Love you, friend!  Congratulations on the big win!!  xo

    • Narci Dreffs December 14, 2017 at 6:43 am

Hi, Beth! I used this brand and size: “Idahoan Buttery Homestyle Mashed Potatoes 4 oz”. Enjoy!

Can’t believe how simple this sounds!! Looks delicious!

  • Haley December 14, 2017 at 8:01 am

Did she also sprinkle extra cheese on top? It looks like there may be a layer of cheese on the top in the photo. Thanks!

    • Mix and Match Mama December 14, 2017 at 8:46 am

      I think she did 🙂 .

    • Narci Dreffs December 14, 2017 at 7:28 pm

Hi, Haley! I totally did add another layer on this day as an afterthought! I was determined to beat Sheaffer, and I thought…”The more cheese, the better, right? Haha!”

  • Lois December 14, 2017 at 10:03 am

In the photo of the potato casserole, the baking dish appears to be an 8×8. Is this true, or did Narci actually bake in a 9×13 as is indicated in her recipe? Thanks for the clarification.

    • Mix and Match Mama December 14, 2017 at 12:33 pm

      It was a 9×13 🙂 .

  • Maria December 14, 2017 at 10:12 am

Not a fan of ranch or sour cream… any ideas how to substitute?? 🙂

    • Mix and Match Mama December 14, 2017 at 12:33 pm

      Cream cheese 🙂

  • Tracy December 15, 2017 at 1:02 pm

This was a hit at my son’s preschool Christmas party today! Simple and delicious. My husband now just asks, “Is this from Mix and Match Mama?” and I always say yes… its my secret weapon 😉

  • Debbie K December 19, 2017 at 7:53 am

Narci, I’ve been wanting a new cheesy potato recipe for our Christmas day dinner with my husband’s family to go along with the ham. This is it! Sounds delicious. Thank you for the winning recipe. My husband isn’t a fan of bacon, do you think it would be ok to leave it out, or just make it with bacon and he’ll love it?

  • Narci Dreffs December 19, 2017 at 5:29 pm

Debbie, I totally think you could leave out the bacon, and it still would be delish! 🙂
