Every Christmas, I host my annual recipe exchange. Every year, we have a theme and then after we eat, we vote on the BEST recipe from the night. In the past, recipes like Sheaffer’s Pineapple Casserole and Sheaffer’s Cream Cheese Caramel Surprise have won. (Side note: Sheaffer had a HUGE target on her back this year. Ha!) This year, the theme was “cook’s choice” and you could bring anything you wanted. We had dips, appetizers, a soup, a breakfast recipe, dessert and even a cocktail. But the winning recipe? Was a casserole. A casserole that would be perfect for you to make this holiday season. Our big winner was Narci with her Baked Potato Casserole…
I snapped this pic right before we devoured it that night. This one was so good…and EASY! You will love it too!!
Shopping List
3 pkgs Instant mashed potatoes
1 (1 oz) pkg dry ranch dressing mix
1 (16 oz) container of sour cream
2 cups shredded cheddar cheese
1 pkg of bacon, cooked to crisp and crumbled
Preheat oven to 350 degrees.
Grease a 9×13 baking dish. Set aside.
Prepare bacon and mashed potatoes as instructed on packages. Crumble bacon and set aside. Mix mashed potatoes, ranch dressing mix, sour cream, 2 cups of cheddar cheese, and crumbled bacon together in a mixing bowl. Spoon into prepared pan. Bake for 20-25 minutes or until heated through.

Narci, I’ve been wanting a new cheesy potato recipe for our Christmas day dinner with my husband’s family to go along with the ham. This is it! Sounds delicious. Thank you for the winning recipe. My husband isn’t a fan of bacon, do you think it would be ok to leave it out, or just make it with bacon and he’ll love it?
