Meal Planning Monday #295

Happy Monday, friends!

It’s the official first day of FALL!!!

And yet…

…Yup.

This is my only post for today because…I had an EPIC weekend, friends.

E-P-I-C.

Why?

Because I finished Game of Thrones.

(You didn’t think I’d finish, did you?)

ME EITHER!!!!

Ha!

I did, and we can chat about that later, but for now, let’s chat about what we should eat this week as that’s always what my kids want to know first thing in the morning.  I’ll say “Good morning!” and they’re all “What’s for dinner tonight?”.  Whhhhhhhhhy do they do that?!

This week, we have a nice mix of sports and practices, so all of the dinners in this week’s Meal Planning Monday require little effort but will give optimal results.

Here’s hoping you have a great start to your week!

Kick your week off with my Pulled Pork Rice Bowls!  This is a great recipe for leftover pork or you can make a double batch and enjoy the pork another night that week as well!  It’s such an easy slow cooker recipe!!

Trader Joe's Meatballs

There’s nothing simpler than Trader Joe’s Meatballs for dinner!  Don’t have a Trader Joe’s near you?  You can adapt this little method with whatever you have at your supermarket!

These Easy BBQ Chicken Taquitos are just that, EASY!

Beer Cheese Chili

I’m such a fan of chili!  It just never, ever lets me down!  Cozy up on this night with my Beer Cheese Chili!

Sausage & Cabbage Skillet

And wrap up your week with my Sausage & Cabbage Skillet!  I could eat this meal every week 🙂 .

Chocolate Pumpkin Swirl Bars

If you’re like us, then you’re looking to add a little pumpkin into your life right now.  My Chocolate Pumpkin Swirl Bars are the perfect way to do that!

That’s it for today!  I’ll see you back here tomorrow!! xo

I can’t wait to hear what your overall thought is on Game of Thrones! As a huge fan, season 8 was kinda a let down for me. What did your husband think of the last season? Anddddd to piggy back on a previous post about binge worthy shows, Vikings would be a good follow up to GoT’s if Andrew hasn’t seen it!

Everything looks delicious and super easy! I love the idea of the pulled pork bowl! Have a great week Shay!

Gonna have your BBQ Chicken Taquitos for dinner. Thanks! Still way too hot here for chili, but looking forward to fixing your beer cheese chili again. I made it last year and it was a wonderful.

We finished Game of Thrones last week. Sooo many thoughts on the ending!!

  • Amanda September 23, 2019 at 9:19 am

We make your beer cheese chili at least bi-weekly!! Chili is the best in fall (though we eat it year round 😂)

  • Shannon September 23, 2019 at 9:41 am

Totally off topic…have you signed up for Trunk Club?!? I just signed up and my first one is scheduled. I’m nervous, excited…LOL!

    • Mix and Match Mama September 23, 2019 at 10:33 am

I don’t know what that is???? Fill me in!!

      • Shannon September 23, 2019 at 12:42 pm

What?!? It’s like Stitch Fix, but from Nordstrom! A friend signed up and has loved everything they’ve sent her. I’m afraid I’m going to have another addiction! HA!!

        • Mix and Match Mama September 23, 2019 at 1:47 pm

Well dang, I need to look into that!!! I didn’t know about it!

  • Samantha LZ September 23, 2019 at 9:42 am

Omg all I can think about now is that chili. Also, you must leave GOT feedback!! I loved GOT. My husband finally binge watched it right before the last season and was addicted. Then we were both let down.

Just wanted to tell you that I made your 3 ingredient chocolate chip pumpkin muffins and my family loved them. I took a picture of them and tagged you on Instagram last week. My family has requested me to make them again. I am glad to do that because they are so yummy!

    • Mix and Match Mama September 23, 2019 at 10:32 am

Ah! I’m so happy to hear this, Melanie!!!

  • Ashton September 23, 2019 at 3:14 pm

Have your kids watched a show on Disney called good luck Charlie? It’s from a few years ago but my kids absolutely love it. My nine and 11 year old watch it all the time from on demand.

Hi shay! I wanted to share one of my families favorite recipes with you. It’s my kids most requested dinner. I hope you try it! We call it magic bean soup

    INGREDIENTS

    1-2 TBSP olive oil
8 oz of brown mushrooms (sliced)
    1 yellow onion (diced)
    3 cloves of garlic (minced)
1 small jar of oil-packed sun-dried tomatoes (drained)
    2 cans of diced tomatoes
2 cans of Cannellini beans (drained & rinsed)
1 jar/can of quartered artichoke hearts (drained)
    1 tsp dried oregano
    1 tsp dried thyme
    slice bread
    shredded cheese

    DIRECTIONS

    Preheat broiler to 400°.
Heat 1 TBSP olive oil in a large pot over medium-high until shimmering. Add 8 oz of brown mushrooms (sliced) and stir for 1-2 min then add 1 yellow onion (diced) (and more olive oil if needed). Saute until lightly browned, about 3 min.
Add 3 cloves of garlic (minced) and 1 small jar of oil-packed sun-dried tomatoes (drained) and cook another 2 min.
Add 2 cans of diced tomatoes, 2 cans of Cannellini beans (drained & rinsed), 1 jar/can of quartered artichoke hearts (drained), some salt & pepper, 1 tsp dried oregano and 1 tsp dried thyme.
Cover the pan, turn the heat down to medium, and cook for 10 min.
Meanwhile, put whatever bread you have on hand on a baking sheet lined with parchment paper, top with whatever cheese you have on hand and bake under the broiler for 5 min. Garnish stew with chopped parsley.
