- 8 Uncooked tortillas (they’re just better, I promise) soft-taco size – tortilla land brand

16 slices of deli ham

24 Fresh Slices of Swiss cheese

3 cups of Freshly grated cheddar cheese (3/4 cup each quesadilla)

2 cups of Andrea’s pulled pork recipe (or any BBQ pulled pork ready to heat) (1/2 cup each quesadilla)

Sliced red onion – 1/2 of a small onion

Cilantro for garnish

1 cup Sour cream
-
Fresh lime juice from 3 limes

2 tbsp Taco seasoning
Instructions
- Medium high heat on a griddle or large pan to cook the tortillas, they’ll turn from translucent to white and they’ll be ready when both sides have lighter brown spots. Watch them closely, you don’t want them to burn! While all 8 tortillas are cooked, heat the meat (both the pulled pork and the deli ham) in the microwave just so they’re warm enough to melt the cheese and don’t take forever for the inside of the quesadillas to cook.
- Line one tortilla with 3 slices of Swiss cheese and 2 slices of warmed deli ham and line another with 3/4 cup of cheddar cheese and stack the warmed pulled pork (1/2 cup) and some red onion slices. Place one of the filled tortillas onto a medium low heated griddle and warm until the cheese melts. Repeat with the other tortilla and combine the two while the second tortilla is heating.
- Repeat with the remaining 6 tortillas/3 quesadillas.
- Garnish with cilantro. Serve with spiced sour cream.
- For the spiced sour cream:
Combine all ingredients in a bowl and keep cold until the quesadillas are ready.
