Pancake Pigs

If you use a g-free pancake mix, this is an easy twist on traditional Pigs in a Blanket!  They’re a little sweet and a whole lot of delicious.


  • 1 cup of pancake mix (we use Trader Joe’s Gluten-Free)
  • 1 egg
  • ¼ cup milk
  • 1 (14 oz) package of little smokies sausages


  1. Preheat your oven to 400 degrees.
  2. Line a baking sheet with foil (for easy clean up) and then set a cooling rack over the top (sounds weird, but do it…make sure your cooling rack is oven safe!).  Set aside.
  3. In a mixing bowl, whisk together your pancake mix, egg and milk.  Next, open your package of smokies and add them all to the bowl, tossing and coating each one.
  4. Take each smokie and place it on your cooling rack.  Repeat.
  5. Pop your baking sheet in the oven and bake about 13-15 minutes or until lightly browned.
  6. Serve and enjoy!


These are great reheated in the microwave after storing in the fridge too.
