Description
If you use a g-free pancake mix, this is an easy twist on traditional Pigs in a Blanket! They’re a little sweet and a whole lot of delicious.

- 1 cup of pancake mix (we use Trader Joe’s Gluten-Free)
- 1 egg
- ¼ cup milk
- 1 (14 oz) package of little smokies sausages
Instructions
- Preheat your oven to 400 degrees.
- Line a baking sheet with foil (for easy clean up) and then set a cooling rack over the top (sounds weird, but do it…make sure your cooling rack is oven safe!). Set aside.
- In a mixing bowl, whisk together your pancake mix, egg and milk. Next, open your package of smokies and add them all to the bowl, tossing and coating each one.
- Take each smokie and place it on your cooling rack. Repeat.
- Pop your baking sheet in the oven and bake about 13-15 minutes or until lightly browned.
- Serve and enjoy!
Notes
These are great reheated in the microwave after storing in the fridge too.
