Easy and delicious cookies that just happen to be gluten-free!
Ingredients

- ½ cup brown sugar
- ¼ cup sugar
- 1 egg
- 1 tablespoon vanilla paste (found near the vanilla extract)
- pinch of salt
- 1 cup of all-purpose flour (we use Namaste gf flour)
- 1 cup of chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Grease a baking sheet with a non-stick spray. Set aside.
- In a mixing bowl, add in your sugars, egg, vanilla paste, and salt. Beat this mixture until creamy. Slowly beat in your flour. Stir in your chocolate chips.
- Drop cookie dough on to prepared baking sheet and bake about 5 to 7 minutes.
- Remove from oven and cool before enjoying
Notes
Kensington makes smaller cookies that don’t require a long time in the oven! This dough is very thick since she does not use water, oil or milk in the recipe. It produces a very moist cookie though!
