My Grandmother’s Strawberry Banana Pie is my very favorite pie! She has been making this recipe since before I was even born, and this was one of the first recipes I wanted to learn how to make when I first began cooking and baking. Each bite just tastes like summertime. This recipe is so easy, great for entertaining (because you really need to make it ahead!), and pairs perfectly with a patio. You will love it!
Ingredients

1 prepared pie crust, baked and ready to go (we use gluten-free)

about 3 ounces of cream cheese (so about half a block)

the juice of 1 lemon

1½ cups sugar

1 large Cool Whip, thawed a bit

2 bananas, sliced
- Sliced strawberries to add to the top (probably 10 or so)
Instructions

In a medium sized bowl, combine cream cheese, lemon juice and sugar with a wooden spoon. Fold in your Cool Whip.

Lay sliced bananas across the bottom of your cooked (and fully cooled) pie shell. Top banana slices with your Cool Whip mixture. Finally, lay sliced strawberries across the top.

Refrigerate at least 12 hours (if not, your sugar won’t dissolve in your pie and it will be grainy tasting). Slice and serve.

So simple and so refreshing for summer! The key really is though to make sure you refrigerate at least 12 hours before enjoying.
