Fall Spice Muffins

Description

If you’re looking for an easy, flavorful, delicious muffin to make this fall, I have one here for you today!  My FALL SPICE MUFFINS are so simple and perfect with a cup of coffee on a chilly autumn morning.  They’re also easily made gluten-free too.


Ingredients

  • 4 cups of pancake mix (we used Krusteaz g-free pancake mix)
  • 3 eggs
  • 1/3 cup sugar
  • 1 cup milk
  • ½ cup veggie oil
  • 1 cup of golden raisins
  • 1 cup of chopped walnuts
  • ½ cup of grated Granny Smith Apple
  • 1 tablespoon ground cinnamon

Instructions

  1. Pre-heat your oven to 350 degrees.
  2. Line your muffin pans with liners or lightly spray with Pam.  Set aside.
  3. In a mixing bowl, stir together your dry pancake mix (unprepared), eggs, sugar, milk, and vegetable oil with a spoon.  Stir in your golden raisins, chopped walnuts, grated apple and cinnamon.
  4. Divide your batter between your prepared muffin tins and pop in the oven.
  5. Our muffins baked about 20 minutes (or until lightly golden on the top and a toothpick inserted in the middle comes out clean).  Allow to cool on the counter five minutes before removing and enjoying.

Notes

Swap out your pancake mix and these are easily made gluten-free!
