Pumpkin Sausage Brioche Breakfast Casserole

Description

I picked up a loaf of Trader Joe’s seasonal Pumpkin Brioche Twist recently because, even though we are a gluten-free house, even I couldn’t resist a loaf of this deliciousness.  If you have a Trader Joe’s near you, I highly suggest you buy a loaf and whip up this savory breakfast casserole for your next weekend breakfast or holiday brunch.  If you don’t have a Trader Joe’s near you, no worries!  In the recipe, you’ll find a substitution as well.  Happy pumpkin everything season, friends!


Ingredients

  • 1 loaf of pumpkin brioche from Trader Joe’s
  • 1 pound of maple breakfast sausage, browned and crumbly (I used Owen’s)
  • 6 eggs
  • 1½ cups milk
  • 1 cup pumpkin butter (we use Trader Joe’s but any variety works)
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Preheat your oven to 350 degrees.
  2. Lightly spray a 9×12 baking dish with Pam.
  3. Next, take your brioche and tear it into bite-sized pieces and spread it all across the bottom.  After that, spread your cooked maple sausage down over the top.  Set aside.
  4. In a mixing bowl, lightly whisk up your six eggs with a fork.  Whisk in your milk and pumpkin butter followed by your pumpkin pie spice.  Pour this egg mixture down over your baking dish.  At this point, you can either pop your breakfast casserole in the oven and bake it about 45 minutes or until the edges are browned and the center is set or you can cover and place this in the fridge for up to 24 hours before baking.
  5. Once your casserole is finished baking, remove from oven and allow to cool five minutes before slicing into squares and serving.

Notes

If you don’t have this delicious pumpkin brioche from Trader Joe’s, no worries!  Simply pick up a traditional loaf of brioche from your favorite bakery and tear that into bite-sized pieces.  Then, instead of using 1 teaspoon of pumpkin pie spice, use 1½ tablespoons.  Same great flavors!
