Plum & Peach Trifle

Description

I have a super simple recipe you can mix and match a million different ways.  Some days, you just need a quick and easy dessert that you can make ahead and well, when that day comes, I highly recommend this one here.

I used chopped peaches and plums, but let’s be real, you can add whatever fruit you love and have on hand.  Blueberries, strawberries, chop up an apple or pear…mix and match it and then make sure you let it sit in the fridge at least four hours (or overnight!) before serving.  So simple and super delish!


Ingredients

Scale
  • 1 (5 oz) box of instant vanilla pudding
  • 2 cups of milk (I use 2%)
  • 2 peaches, chopped into bite-sized pieces (I leave the skin on for flavor and texture but you do what you love to do)
  • 2 plums, chopped into bite-sized pieces
  • 1 box of your favorite shortbread cookie (we use Schar gluten-free)
  • Your favorite whipped topping (we use Cool Whip)

Instructions

  1. In a mixing bowl, whisk together your vanilla pudding mix and milk until the pudding sets (about 2 minutes).  Once pudding has thickened, set aside.
  2. Grab your serving bowl and add a layer of your chopped fruit across the bottom.  Next, pour over some of your vanilla pudding followed by a layer of shortbread cookies.  Reserve some cookies to crush and garnish at the end.  Repeat (we typically do three layers of each).
  3. When you’ve used all of your fruit and pudding, add a layer of whipped topping across the top and finish by sprinkling crushed shortbread cookies over the top.
  4. Pop your finished trifle in the fridge and chill at least four hours (up to over night) before serving.  Enjoy!
