Description
We are always looking for simple weeknight suppers (especially ones where we can add extra protein!), and this one is on repeat over here. To really simplify it, I buy frozen rice from either Trader Joe’s or Walmart because…it tastes just like one from a rice cooker but in a fraction of the time. It truly is the simplest and easiest way to add rice to any meal.

- 2 pounds of ground beef
- Extra Virgin Olive Oil (EVOO)
- salt and pepper
- 1 red onion, chopped
- 6 cloves of garlic, finely chopped
- 1 (or 2!) jars of your favorite marinara sauce
- enough rice to feed your crew (we use 2 boxes of frozen rice)
- grated Parmesan cheese to garnish
Instructions
- In a large skillet or pot, begin browning your ground beef in a big drizzle of EVOO over medium-high heat. Meanwhile, in a second skillet, begin sautéing your onion in a drizzle of EVOO as well also over medium-high heat. We use two different skillets to speed this up.
- Once your onions are nice and sautéed, stir in your chopped garlic for about a minute and then pour this mixture down into your browned ground beef. Stir until it’s combined and add in a big pinch of both salt and pepper.
- Next, stir in your favorite marinara sauce and let it simmer just a minute.
- When you’re ready to eat, add your hot rice to the ground beef mixture, toss and serve with a bit of Parmesan to garnish.
Notes
Two pans just really speeds this up. The beef can brown, the onion can sauté, you add them together along with a jar of your favorite sauce and bam, it’s done and extra flavorful. Of course, you could use pasta instead of rice in this too. Not a recipe, an easy idea!
