Description

Whether you need a little treat for Valentine’s Day or just because, my NUTELLA PECAN TARTLETS could not be simpler (or more delish!).  You know how I feel about all things P-I-E, and these are like mini Nutella pies (with peanut butter in them too!).  Yum!

Ingredients

Scale
  • 1 refrigerated pie crust, thawed per box directions (I use one Pillsbury Pie Crust)
  • 1 (8 oz) package of cream cheese, softened
  • 1 cup of Nutella
  • ½ cup of creamy peanut butter
  • 1½ cups of chopped pecan pieces

Instructions

  1. Preheat your oven to 425 degrees and lightly spray a mini muffin tin with non-stick spray.  Set aside.
  2. Roll out your pie crust with a rolling pin so it’s just a little bit more thin.  Next, I take a 1/4 measuring cup and use that as my template to get about 20 round circles.  You will cut each circle out (re-roll the dough to make more if necessary) and then place them inside your mini muffin tin.  Repeat and then pop the crust in the oven for 5 minutes.  Remove and allow to cool completely before filling.
  3. In a mixing bowl, beat with an electric mixer your cream cheese, Nutella and peanut butter until creamy.  Stir in your pecan pieces.
  4. Spoon your filling into the cooled pie shells.  Refrigerate when not enjoying.

Notes

If you place your measuring cup upside down, it’s easy to cut out perfect circles for the “crust”.
