We love anything and everything with butterscotch over here 🙂 .
Now that the month is just about up, I decided I need to make my own scotchies for the months in-between. My recipe is super simple and very delish (and easy to make gluten-free!).
Between now and next February when Mary makes them again, we will need to keep these on hand.

Ingredients

- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon cinnamon
- 1 cup of butter, softened
- 1 cup of brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup butterscotch chips
- 1½ cups of oats (quick cooking is fine or traditional)
Instructions
- Preheat oven to 350 degrees.
- Grease two cookie sheets and set aside.
- In a mixing bowl, whisk together the flour, baking soda and cinnamon. Set aside. In a second mixing bowl, cream together your butter and brown sugar with an electric mixer. Beat in the eggs and then finally, stir in the vanilla. Next, slowly add your dry ingredients into your wet ingredients and stir together with a spoon. Then stir in your butterscotch chips and oats.
- Drop by the tablespoonful onto your prepared baking sheets.
- Bake about about 12 minutes or until the edges are just lightly browned.
- Remove from oven and enjoy immediately or keep stored in an airtight container.
Notes
To make these cookies gluten-free, simply substitute the flour for a gf version (we love Namaste!) and make sure your oats are gf too.
