Description

Whether you’re looking to add a little “green” into your St. Patrick’s month or just want a yummy lemony-lime cupcake, my CITRUS CUPCAKES are oh so easy and super delish.

I just mix and matched my traditional LEMON BUNDT CAKE into these little cupcakes with a bit of lime zest and bam, a festive and delicious treat.

They are oh so good!


Ingredients

  • 1 box of white cake mix  (do not prepare)
  • 2 small boxes of instant lemon pudding (do not prepare)
  • ½ cup of veggie oil
  • 1 cup water
  • ¼ cup fresh lime juice
  • 4 eggs
  • the zest of two limes (divided)
  • 1 (8 oz) package of cream cheese, softened
  • 2 cups of powdered sugar
  • a tablespoon or so of milk
  • several drops of green food coloring

Instructions

  1. Preheat oven to 350 degrees
  2. Add cupcake liners to muffin tins.  (This makes about 18)
  3. In mixing bowl, combine cake mix, puddings, oil, water, ¼ cup juice and eggs with electric mixer.  Zest one of your limes and stir this into the batter.  Pour into muffin tin and bake about 18 minutes or until toothpick inserted comes out clean.
  4. Pull from oven and allow cupcakes cool before adding frosting.
  5. To make the frosting, beat your cream cheese, powdered sugar and milk with an electric mixer.  Add more milk if it’s too thick or more powdered sugar if it’s too thin.  Once it reaches the desired consistency, beat in a few drops of your green food coloring.
  6. Frost cooled cupcakes and then zest your second lime and add it to the tops as “sprinkles”.
