Greek Yogurt Chicken Salad

A few weeks ago, I was at Trader Joe’s about to buy my first batch of their chicken salad for the season (they have so many great ones!) when I decided to make one myself at home instead and use things that would give it an extra oomph of protein.  Now, this isn’t even a recipe today, it’s just an idea should you want to also throw together a quick and easy “chicken salad” minus the mayo and with a little bump of protein.  I’m not going to include measurements today.  This is just “add a little or a lot” of what you love.  Enjoy!


Ingredients

  • cooked and ready to eat chicken, chopped (use a rotisserie chicken from the store, leftovers, whatever you have on hand)
  • some plain (non-flavored) Greek yogurt
  • salt and pepper
  • chopped green onions
  • sliced red grapes
  • cashews
  • golden raisins

Instructions

  1. I used some rotisserie chicken and added a lot (I am always looking for more protein) to a bowl.  I tossed it with a big spoonful of Greek yogurt, a nice pinch of salt and pepper along with my green onions, grapes, cashews, and golden raisins.  I combined it all and then popped it in the fridge.
  2. I think it’s best when it’s chilled at least an hour or two.  Remove to eat alone or make a sandwich.  I made enough for two full days.  That’s it!
