Description
Here is a little “idea” (it’s not even really a recipe!) where I used hot honey to jazz up a regular old grilled chicken night. Now, if you’re not into “hot” honey, totally sub with a regular honey. Your marinade and drizzle will still be delicious even minus the hot. Fire up your grill, throw your chicken on, heat up some frozen rice, make a bowl, and drizzle it with a little honey. Enjoy!

- 2 pounds of boneless, skinless chicken breast halves
- Extra Virgin Olive Oil (EVOO)
- salt and pepper
- hot honey (you’ll need several big drizzles for this)
- enough rice for each bowl (we love heating up frozen rice!)
- your bowl toppings (avocado, pico, chopped green onions, salsa…whatever you have/love will work)
Instructions
- Preheat your outdoor grill or indoor grill pan to medium-high heat.
- You can make your marinade in advance! I like to make mine earlier in the day, but sometimes, I just make it right before we start grilling. In a large gallon-sized baggie, add in your chicken followed by a nice big drizzle of EVOO, a liberal pinch of both salt and pepper, and several big drizzles of hot honey. Zip up your bag and then make sure all of the chicken is nice and coated. You can pop this in the fridge until dinner or begin grilling right away.
- On your grill, place your marinated chicken breasts (discarding any extra marinade) and grill about 8 minutes each side or until the juices run clear. Remove from grill and build your bowls.
- To each bowl, add some fluffy and cooked rice followed by your grilled chicken and any toppings you love (like sliced avocado, pico, chopped green onions, salsa, etc). Finish off each bowl with a little drizzle of hot honey for an added dose of flavor.
- Serve and enjoy!
