Description

Whether you’re looking for a little RED, WHITE, AND BLUE to add to your July 4th or you just want a really easy and yummy cheesecake for any summer occasion, you need to try my STRAWBERRY & BLUEBERRY CHEESECAKE. You guys, I’ve said this before, but I’m going to say it again…I make E-A-S-Y cheesecakes.  They’re super easy, they’re super quick, they taste delicious, and they always come out beautiful. Once you make one, you will make them again and again.  You can keep the top of this one simple or you can make it into a flag for a festive occasion.


Ingredients

  • 2 cups of crushed graham crackers
  • 1/2 cup (1 stick) butter, melted
  • 4 (8 oz) packages of cream cheese, softened
  • 1¼ cups sugar
  • 4 eggs, at room temp
  • 2 teaspoons vanilla extract
  • 1½ cups of chopped strawberries, plus a few slices for garnishing
  • 1½ cups of blueberries, plus a few more for garnishing
  • Whipped topping for garnish (like Cool Whip)

Instructions

  1. Preheat your oven to 350 degrees.
  2. Lightly spray your springform pan with cooking spray and set aside.
  3. In your food processor, pulse your crushed graham crackers with your melted butter until combined.  Press this mixture across the bottom of your pan.  Set aside.
  4. In your mixing bowl, beat with an electric mixer your cream cheese and sugar until smooth.  Beat in your four eggs.  Next, beat in your vanilla.  Now, stir in your chopped strawberries and blueberries.
  5. Pour your batter into your pan on top of your crust.
  6. Bake one hour.
  7. After you remove the cake from the oven, allow to cool on your counter 40 minutes and then refrigerate it at least four hours.
  8. When you’re ready to serve, pop the sides of your springform pan to release it.  Remove sides of pan and then top your cake with whipped topping (homemade or you can put on some Cool Whip).
  9. Finally, garnish your cheesecake with a few sliced strawberries and blueberries…maybe into the American flag for fun?!

Notes

For this recipe, you will need a 9″ springform pan.  You can find these pans everywhere from Target to Williams-Sonoma and a multitude of places in between.  They make cheesecakes a snap!

Simply use gluten-free graham cracker crumbs for an easy g-free friendly cheesecake too!
