Description
I’m not sure why it took me this long to make a brownie that tastes like my favorite seasonal coffee drink, but the time has come for my PUMPKIN SPICE LATTE BROWNIES. Not only are these pretty simple to whip up, but they’re really good too. If you’re not a big coffee drinker, no worries! This recipe has just a touch of coffee flavor, but it’s mostly delicious chocolate and pumpkin. The perfect combination.

- 2 cups sugar, divided
- 2 cups all purpose flour, divided
- ¼ cup baking cocoa
- 1 tablespoon espresso powder (found on the baking cocoa aisle)
- a bit of salt, divided
- ½ teaspoon baking soda, divided
- ½ cup vegetable oil
- 4 eggs, divided
- 1 tablespoon pumpkin pie spice
- 1 cup canned pumpkin (we use Libby’s)
Instructions
- Preheat your oven to 350 degrees. Grease (I use Pam) a 9×12 baking dish. Set aside.
- In a large bowl, whisk together one cup of your sugar, one cup of your flour, your cocoa powder, espresso powder, a pinch of salt, and ¼ a teaspoon of your baking soda. Once whisked together, beat in your vegetable oil and two of the eggs until just combined.
- Take half of this batter and spread it over the bottom of your prepared baking dish (it will be a very thin layer). Set remaining half of the batter aside.
- In a second mixing bowl, whisk together your remaining one cup of sugar, one cup of flour, another pinch of salt, pumpkin pie spice, and remaining ¼ teaspoon baking soda. Using your electric mixer, beat in your canned pumpkin and remaining two eggs.
- Take this pumpkin mixture and spread it over the first layer. Lightly spread it across to form a second layer.
- Finally, take the remaining chocolate batter and drop it by the tablespoon on to your layers. Lightly spread it over to form a third layer. Once spread, take a sharp knife and swirl the layers together to give it that marbled appearance. The batters will mix and swirl in the baking pan.
- Pop your brownies into the oven and bake about 30 minutes. A toothpick inserted in the middle should come out clean when they’re finished baking.
- Allow to cool on the counter about 5 minutes before slicing into bars and serving.
Notes
That third layer will not be nice and neat. That’s okay! You’re going to swirl it together, so it does not have to be three neat layers.
