My STRAWBERRY CAPRESE SALAD isn’t even a recipe. It’s just an easy idea. Typically, you find tomatoes in a Caprese salad, but I subbed with strawberries. You could, of course, use both. So fresh, so simple, so SUMMER! Below is the general idea. Make as much or as little as you want with the list of ingredients below.
Ingredients
- Fresh spinach
- Torn basil
- chopped green onions
- sliced strawberries
- sliced fresh mozzarella
- salt and pepper
- balsamic vinegar
- Extra Virgin Olive Oil (EVOO)
Instructions
- Depending on how big you want your salad, add as much or as little as you want.
- I like to toss my fresh spinach, torn basil leaves and chopped green onions together in a little olive oil. Then, I add in my sliced strawberries and thick slices of fresh mozzarella (you can sub with the mini balls of mozzarella too). I finish with a generous pinch of salt and pepper and a drizzle of balsamic vinegar.
- Serve immediately.
