My daughter requested an apple cake for her birthday, so I decided to take my FRESH APPLE CAKE and mix and match the frosting and batter just a bit. This time, it’s a cinnamon cake with a cream cheese frosting on top. Every single bite tastes like fall. If you are looking for the perfect September recipe, here you go. Enjoy! xx

- 1 stick of butter, melted
- 2 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups all purpose flour
- 1 teaspoon baking soda
- a pinch of salt
- 2½ tablespoons cinnamon
- 4 cups chopped apple pieces (I used Gala apples)
- 1 cup of pecan pieces, optional
- 1 (8 oz) package of cream cheese, softened
- 2 cups of powdered sugar
- a splash of milk
Instructions
- Preheat oven to 350 degrees.
- Spray a 9×12 baking dish with cooking spray. Set aside.
- In a mixing bowl, stir together your melted butter, sugar, eggs and vanilla with a spoon. Set aside.
- In a second mixing bowl, whisk together your flour, baking soda, salt, and cinnamon. Slowly stir the dry ingredients into the wet ingredients. Stir in your chopped apple pieces and pecans.
- Pour your batter into your prepared baking dish and bake 35 to 40 minutes or until a wooden toothpick inserted into the center comes out clean.
- Remove from oven and allow to cool completely before frosting.
- To make the frosting, beat your cream cheese, powdered sugar and milk together with an electric mixer. Add a bit more powdered sugar if your frosting is too thin or a bit more milk if it’s too thick.
- Spread frosting over cooled cake and serve.
- When not enjoying, keep refrigerated.
