Description

It’s my CHEESY PUMPKIN BACON BREAD!

Because pumpkin is good with everything and bacon is good with everything so it only makes sense that we put them together 🙂 .

This quick bread is so simple to whip up and would pair perfectly with your chili at dinner time or with your scrambled eggs in the morning.  This is one of those savory little bites you can enjoy all fall long.  Happy baking! xx


Ingredients

Scale
  • 1½ cups all purpose flour
  • 2 teaspoons baking powder
  • a big pinch of both salt and pepper
  • 2 eggs
  • ¼ cup milk
  • ¼ cup butter, melted
  • 1 cup of canned pumpkin (not the entire can, I use Libby’s)
  • about 2 cups of shredded sharp cheddar cheese
  • 10 slices of bacon, cooked to crispy and crumbled
  • 6 green onions chopped

Instructions

  1. Preheat oven to 350 degrees.
  2. Lightly spray one loaf pan with cooking spray and then set aside.
  3. In a mixing bowl, whisk together your flour, baking powder, salt, and pepper.  In a second mixing bowl, whisk together your eggs, milk, butter, and pumpkin.  Pour this pumpkin mixture into your flour and combine.
  4. Once combined, stir in your shredded cheddar, crumbly bacon, and green onions.
  5. Pour this into your prepared loaf pan and pop in the oven to bake about 40 minutes.
  6. When the edges are lightly browned and the center is set, remove from oven and allow to cool before inverting the bread out on to a serving platter.  Slice and enjoy.
