Mama’s Corn Salad

No backyard party or poolside affair is ever complete in our family without this easy (make ahead!) corn salad from my mom!


  • 2 (15 oz) cans corn, drained
  • 2 cups cheddar cheese, grated
  • 1 cup mayonnaise
  • 1 green bell pepper, chopped
  • 1 red onion, chopped
  • 1 (10 oz bag) Chili-Cheese Fritos


  1. In a large bowl, mix the first 5 ingredients together, cover and chill until ready to serve.
  2. Toss Fritos in right before serving.
  3. Enjoy!


To keep this g-free friendly, substitute with plain Fritos instead of chili cheese.
