It’s the Wednesday before Memorial Day weekend which means you probably need a recipe or two for your holiday. I first shared this recipe with you way back on May 10, 2012…ELEVEN YEARS AGO! And you know what?! To date, this is one of THE MOST VIEWED recipes every single spring and summer here on my blog.
Basically, this corn salad is famous…and super delicious 🙂 .
It’s also SO EASY!! I cannot remember the last time I hosted a patio party or outdoor event when I did not serve this dish. You make it in advance (bonus!), it’s unique and it’s always devoured.
I’m re-sharing the recipe today because I’ve made it twice now just this month alone and one of the times, I videoed myself doing it. Catch the video on IG later today and you’ll see just how easy Mama’s Corn Salad truly is.

Mama’s Corn Salad
- Prep Time: 5 minutes

- Yield: enough for a large side dish!
Description
No backyard party or poolside affair is ever complete in our family without this easy (make ahead!) corn salad from my mom!
Ingredients

2 (15 oz) cans corn, drained

2 cups cheddar cheese, grated

1 cup mayonnaise

1 green bell pepper, chopped
-
1 red onion, chopped
-
1 (10 oz bag) Chili-Cheese Fritos
Instructions
- In a large bowl, mix the first 5 ingredients together, cover and chill until ready to serve.
- Toss Fritos in right before serving.
- Enjoy!
Notes
To keep this g-free friendly, substitute with plain Fritos instead of chili cheese.
