Easy & Gluten-Free Oatmeal Chocolate Chip Cookies

Description

Who doesn’t want an easy and gluten-free cookie recipe?!  These yummy cookies have been a hit at my house!  They’re easy (one bowl!), quick to make, and gluten-free.  Whether you make them as an after school treat or weekend snack, they’re delicious!  Enjoy!


Ingredients

Scale
  • 1 cup gluten-free flour (we use Namaste)
  • ½ cup brown sugar
  • 2 eggs
  • ½ teaspoon baking powder
  • a pinch of cinnamon
  • a pinch of salt
  • 1 cup of gluten-free oats
  • ½ cup (or more if you’d like!) of semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350 degrees.
  2. Grease your baking sheet or line with parchment paper, set aside.
  3. In your mixing bowl, beat with an electric mixer your flour, brown sugar, eggs, baking powder, pinch of cinnamon and salt until combined.  Stir in your oatmeal and chocolate chips.
  4. Drop by the tablespoon or so onto your prepared baking sheet and pop them in the oven about 9 minutes.
  5. Remove, allow to cool just a bit and enjoy!
