Easy & Gluten-Free Oatmeal Chocolate Chip Cookies

Who doesn’t want an easy and gluten-free cookie recipe?! These yummy cookies have been a hit at my house! They’re easy (one bowl!), quick to make, and gluten-free. Whether you make them as an after school treat or weekend snack, they’re delicious! Enjoy!
Ingredients
- 1 cup gluten-free flour (we use Namaste)
- ½ cup brown sugar
- 2 eggs
- ½ teaspoon baking powder
- a pinch of cinnamon
- a pinch of salt
- 1 cup of gluten-free oats
- ½ cup (or more if you’d like!) of semi-sweet chocolate chips
Instructions
- Preheat your oven to 350 degrees.
- Grease your baking sheet or line with parchment paper, set aside.
- In your mixing bowl, beat with an electric mixer your flour, brown sugar, eggs, baking powder, pinch of cinnamon and salt until combined. Stir in your oatmeal and chocolate chips.
- Drop by the tablespoon or so onto your prepared baking sheet and pop them in the oven about 9 minutes.
- Remove, allow to cool just a bit and enjoy!

Are the eggs enough to bind everything together? I noticed there is no butter or oil used in this recipe?

Wait I am trying to make these right now and they are crumbly before baking. The recipe says oats. Is it supposed to be oatmeal? 🤣

So weird! Mine were a crumbly mess that wouldn’t stick together at all with the dry oats and only the eggs. I had to add butter.

Hey Shay, so I really think you’re missing a liquid in your recipe or the dry ingredients aren’t listed correct measurements. I had super crumbly dough even after adding oats. They are super dry cookies with the ingredients listed. : /
