Apple Zucchini Bread

Description

If you’re an apple person right now too, make sure you check out this yummy APPLE ZUCCHINI BREAD which is delicious, easy to make, and can also be gluten-free (I love Namaste G-Free Flour). This weekend, make a loaf to enjoy with your morning coffee or as an afternoon treat.  I love celebrating the simple things like apple recipes to kick off the fall season.


Ingredients

Scale
  • 1½ cups all purpose flour (can be gluten-free)
  • 1 cup sugar
  • 1 tsp baking powder
  • a pinch of salt
  • 1 tablespoon cinnamon
  • 2 eggs
  • ½ cup vegetable oil
  • 1 cup shredded zucchini (I do not peel first)
  • 1 cup shredded apple (I use Gala and do not peel first)
  • ½ cup of walnut pieces, optional

Instructions

  1. Preheat your oven to 350 degrees.  Grease your standard (8×4) loaf pan and set aside.
  2. In a mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon.  In a second bowl, whisk your eggs with the vegetable oil.  Stir this mixture into your flour mixture and combine.  (Please note, at this point, the batter looks pretty dry.)
  3. Next, stir in your grated zucchini and apple.  At this point, the batter will look perfect.  Stir in your walnut pieces if you’d like.
  4. Pour this batter into your prepared loaf pan and pop it into the oven to bake about 40 minutes or until a toothpick inserted in the middle comes out clean.
  5. Remove from oven and allow to cool at least five minutes before slicing and serving.

Notes

Every time I make this, the batter looks dry until the shredded zucchini and apple is stirred in.
