Gingerbread Blender Muffins

Description

You guys, my GINGERBREAD BLENDER MUFFINS might be my very favorite!  These are delicious and perfect for your holiday season.


Ingredients

Scale
  • 1 egg
  • ¼ cup melted butter
  • about 1 cup of mashed bananas (the more ripe the better, about 2 bananas)
  • 1 cup sugar
  • ¼ cup molasses
  • 2 cups flour (we use Namaste g-free flour)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1½ tablespoons ground ginger
  • just a pinch of cinnamon

Instructions

  1. Preheat your oven to 350 degrees.
  2. Place muffin wrappers in a 12-count muffin tin (or grease well).
  3. Put your first five ingredients right inside your blender.  Blend it up until smooth (not long, less than a minute).
  4. Next, add your flour, baking soda, salt, ginger, and cinnamon to a mixing bowl.  Slowly pour your banana mixture into this flour mixture and stir until just just combined.
  5. Divide this batter into your prepared muffin tins.
  6. Pop in the oven and bake about 18 minutes or until lightly browned on the edges and a toothpick inserted in the middle comes out clean.
  7. Allow to cool at least five minutes before removing and enjoying.  Store your muffins at room temp.

Notes

Now, don’t forget, you can easily make this into a loaf by pouring the batter into a prepared standard loaf pan and baking 35 to 40 minutes. You can also easily make them gluten-free (just subbing with your favorite gf flour).
