Well, I called myself the Mix and Match Mama a million years ago because I loved taking a simple recipe and mixing-and-matching it to create other easy and seasonal treats…and thus, another blender muffin just in time for the holiday season 😉 .
You guys, my GINGERBREAD BLENDER MUFFINS might be my very favorite! These are delicious!!
Now, don’t forget, you can easily make this into a loaf (the directions are below in the recipe), and you can also easily make them gluten-free (just subbing with your favorite gf flour).
I’ve made so many of these little muffins and loaves over the years because they’re always easy and delicious…and I certainly hope you’ve been enjoying them too!

Description
You guys, my GINGERBREAD BLENDER MUFFINS might be my very favorite! These are delicious and perfect for your holiday season.
Ingredients
- 1 egg
- ¼ cup melted butter
- about 1 cup of mashed bananas (the more ripe the better, about 2 bananas)
- 1 cup sugar
- ¼ cup molasses
- 2 cups flour (we use Namaste g-free flour)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1½ tablespoons ground ginger
- just a pinch of cinnamon
Instructions
- Preheat your oven to 350 degrees.
- Place muffin wrappers in a 12-count muffin tin (or grease well).
- Put your first five ingredients right inside your blender. Blend it up until smooth (not long, less than a minute).
- Next, add your flour, baking soda, salt, ginger, and cinnamon to a mixing bowl. Slowly pour your banana mixture into this flour mixture and stir until just just combined.
- Divide this batter into your prepared muffin tins.
- Pop in the oven and bake about 18 minutes or until lightly browned on the edges and a toothpick inserted in the middle comes out clean.
- Allow to cool at least five minutes before removing and enjoying. Store your muffins at room temp.
Notes
Now, don’t forget, you can easily make this into a loaf by pouring the batter into a prepared standard loaf pan and baking 35 to 40 minutes. You can also easily make them gluten-free (just subbing with your favorite gf flour).

Not really. We now have both and regular flour browns up so much better, that now, I tend to use that instead.
