Description

These waffles are super easy, delicious, and a simple way to “hide” protein in your breakfast.


Ingredients

Scale
  • 2 egg whites
  • 1 scoop of vanilla protein powder
  • 1 mashed banana (optional)
  • ½ cup quick cooking oats
  • a pinch of cinnamon
  • a handful of fresh blueberries

Instructions

  1. Preheat your waffle iron.
  2. In a small bowl, add in your 2 egg whites, 1 scoop of vanilla protein powder, 1 mashed banana (optional), ½ cup quick cooking oats, and a big pinch of cinnamon.  Once combined, stir in your blueberries.
  3. Make sure your waffle iron is sprayed with non stick spray and then ladle your batter on and close the lid.
  4. After a few minutes, your blueberry waffle is finished.  Remove carefully and add your favorite topping.  I love lemon curd on mine.

Notes

I topped mine with Trader Joe’s lemon curd because I love lemon and blueberry together.  Adding the mashed banana is totally optional.  You can omit it.
