
A few years ago, I shared my friend Shari’s PROTEIN PANCAKES. This is one of those recipes that I make for several months in a row and then forget about it…and then I start making them again…and then I forget about them. Every time I make them, I think to myself “why don’t I make these more often?”. They’re super easy and really tasty…plus, I can “hide” protein inside and you know me…I’m always aiming to get more protein in my diet.
The other day, I had a nice big carton of blueberries in my fridge, so I decided to pull out my waffle iron, whip up this easy little “recipe”, and add in some blueberries. I made them two days in a row. Once with the bananas and once without. It was delicious both ways. I topped mine with Trader Joe’s lemon curd because I love lemon and blueberry together.

Blueberry Protein Waffles

Description
These waffles are super easy, delicious, and a simple way to “hide” protein in your breakfast.
Ingredients
- 2 egg whites
- 1 scoop of vanilla protein powder
- 1 mashed banana (optional)
- ½ cup quick cooking oats
- a pinch of cinnamon
- a handful of fresh blueberries
Instructions
- Preheat your waffle iron.
- In a small bowl, add in your 2 egg whites, 1 scoop of vanilla protein powder, 1 mashed banana (optional), ½ cup quick cooking oats, and a big pinch of cinnamon. Once combined, stir in your blueberries.
- Make sure your waffle iron is sprayed with non stick spray and then ladle your batter on and close the lid.
- After a few minutes, your blueberry waffle is finished. Remove carefully and add your favorite topping. I love lemon curd on mine.
Notes
I topped mine with Trader Joe’s lemon curd because I love lemon and blueberry together. Adding the mashed banana is totally optional. You can omit it.

I think I might make these today! I was planning on breakfast for dinner at our house anyway. To confirm there’s no flour or anything? Just the oats? And does this recipe make like 1 big waffle or how many?

That’s correct! We have used both regular and gluten-free oats in this recipe. It makes three little pancakes or one large Belgian waffle.

I love melting my lemon curd and adding to waffle/pancake recipes. Can reduce or replace butter with it. So good and add cottage cheese! I blend mine down and my kids never taste it!
