Why does Spring make me think of muffins? I think it’s all of that “girly” food that we tend to eat this time of year…you know…chicken salad, fruit with poppy seed dressing and muffins. I love girl food, I love muffins and breads and I love Hawaii…this muffin is a little bit of sunshine in my day. Aloha!
Shopping List
3 cups whole macadamia nuts
1 (15 oz) can pineapple chunks, drained
3 cups flaked coconut
3/4 cup all purpose flour
3/4 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
3 eggs
1 teaspoon vanilla
Preheat oven to 325 degrees.
Line a 12 cup muffin tin with cupcake liners.
Combine nuts, pineapple and coconut in a large bowl, mix well. Sift together flour, sugar, baking powder and salt in a separate bowl. Add flour mixture to nut mixture. Mix until all ingredients are incorporated. Beat eggs in a small bowl with a whisk until foamy. Add in vanilla to egg mixture. Stir egg mixture into muffin mixture. Spoon batter into muffin tin. Bake 20-25 minutes or until toothpick inserted in the middle comes out clean.
