I was totally going to blog about something else today. Totally. But then yesterday, Smith and I were at Target and I found the Halloween Funfetti cake mix stuff and well…I couldn’t help myself. I came home and whipped these Halloween Funfetti Whoopie Pies up in minutes. I know it’s just mid-September…but Halloween has so many yummy desserts, I better start now or else I’ll run out of time. Try these. Try these. Trust me. Try these!
These two packages just called out to me at the store.
Shopping List
1 box Halloween Funfetti cake mix
1/2 cup veggie oil
2 eggs
1/4 cup water
Funfetti icing
Preheat oven to 350 degrees
Combine cake mix, oil, eggs, and water in bowl.
Drop by 2 tablespoons onto lined cookie sheet (leave about an inch between each cookie)
Bake 8-9 minutes
Cool on pan 5 minutes, move to wire rack and cool 15 more minutes
Take one cookie and place a tablespoon or so of store bought funfetti icing in the center. Press another cookie on top (this will spread the icing out to the edge).
You better double the recipe :).

It depends on how big you make the Whoopie Pies…I usually make 12 but you could them smaller "mini" sized too.
