I take no credit for this cookie. I didn’t find the recipe. I didn’t make the cookies. All I did was eat them up and snap the pictures. My sweet friend Sheaffer found a recipe for these delectable s’mores cookies off of The Girl Who Ate Everything (a fabulous blog). She sent me the recipe and then we discussed how easy it would be to modify it (the recipe calls for making the cookie dough from scratch). Twenty four hours later, there’s a package on my front porch. Sweet Sheaffer knows how to make me happy. Easy, adaptable, delicious…the perfect treat.
Shopping List
Graham crackers
mini marshmallows
refrigerated chocolate chip cookie dough
Hershey chocolate
Preheat oven to 375 degrees
Lay graham cracker squares side by side on baking sheet.
Place 2 tablespoons of dough on each graham cracker square (so half a sheet). Press dough down so that it adheres to the cracker.
Bake for 5 minutes.
Remove from oven and top each cookie with several marshmallows (4 or 5), pushing them into the dough as well.
Bake for 5 more minutes or until cookie looks brown around the edges and the marshmallows are nice and gooey. Remove and press one Hershey rectangle into each “cookie”.
Cool on wire rack and enjoy.
This recipe is fabulous because you can make as many or as little as you like depending on your mood. If you have the store bought dough on hand, you can whip up 1 or 2…or 20 or 30. You’ll be hooked. Thanks Sheaffer :).

So being from Canada I thought these looked so yummy. A couple of snowy sundays ago my husband and son in law cleared off our pond with the snowblower then we had a campfire, in February, on the pond (there was 10 inches of ice.) I made these cookies…mmmmmso good. So good that my daughter took a picture of the them and put the picture on facebook. Her boyfried at school in Indiana (8 hours away) made several comments about them. He was home this weekend so I made him a batch to take back. I'm not thinking they made it past the 8 hour car drive back and I got a very nice text from him late last night that they were awesome and hew new fav cookie. So a definite hit at our house and ohhhhh so easy. Definately in my regular rotation now.
