I found this recipe on Pinterest. I was very curious since a. it was a fudge that required microwaving only b. said tasted like funfetti (which I love) c. was super cute…therefore, I made me some.
I took the fudge to a Sunday school class party and received mixed (but mostly positive) reviews. It doesn’t take like funfetti…let’s just get that out there…it does taste like delicious Eagle Brand Milk…so, if you love it (and some of my friends…Courtney Willis…claim to absolutely love) then this fudge is for you. What I do love about this recipe is that it’s a method that can be made 100 different ways. I’m 100% sold on the method…I think you can get super creative with your extracts, candy pieces, and chip selection…that’s the brilliant part of this recipe…it’s very, very versatile.
Shopping List
1 can Eagle Brand Milk
1 package white chocolate chips
3 teaspoons vanilla
1 teaspoon almond extract
colorful sprinkles
In a microwavable bowl, melt chocolate chips and milk together (stirring every 40 seconds). Once melted, add in extracts and sprinkles. Don’t over-stir or the sprinkles will melt and make the fudge a muddy color. Pour into a foil lined 8×8 inch pan and refrigerate until set (at least one hour). Slice and serve.
Some quick thoughts:
1. use chocolate chips instead of white and omit the almond extract…add in chopped pecans or almonds for a chocolate fudge (sounds so great to me)
2. instead of sprinkles, add in dried cherries and/or cranberries
3. Easily double the ingredients and pour into a 9×13 inch pan for more servings.
The little candies were whipped up in less than 5 minutes and are so adorable. I love the method…I don’t have time to make fudge from scratch…this is a great short-cut.
