Approximately 4.5 seconds after I said, “hey honey, I think I’m going to start a food blog and make several variations of whoopie pies”, my husband said, “make red velvet ones please!”. So here they are…a festive dessert for a festive season. Oh and by the way, they have a chocolate chip cream cheese filling…yes…I went there.
Shopping List
1 box red velvet cake mix
1/2 cup veggie oil
2 eggs
1/4 cup water
store bought cream cheese frosting
1/2 cup mini chocolate chips
Preheat oven to 350 degrees
Combine cake mix, oil, eggs, and water in bowl.
Drop by 2 tablespoons onto lined cookie sheet (leave about an inch between each cookie)
Bake 9-10 minutes
Cool on pan 5 minutes, move to wire rack and cool 15 more minutes
Pour frosting into a bowl. Add in chocolate chips and stir until chips are evenly distributed in frosting.
Take one cookie and place a tablespoon or so of frosting in the center. Press another cookie on top (this will spread the icing out to the edge).
Red Velvet makes me happy. And it makes my man happy too.

These were a huge hit at my office book club today! I did struggle with the batter last night but I have a finicky oven (the downside to being in a rental) so I think it was more that than the actual recipe. I also made my own frosting which was amazing. Would definitely make again!!
