Aren’t these cookies cute?!?! I’m not going to lie…when I bake stuff for the blog, I usually have a bite (maybe two bites) but when I made these cookies, I had four cookies. FOUR. They are just sooooo good! They’re not too pepperminty, so don’t worry. They’re just festive and cheery and super, super simple to make.
This is all you need to make them. Packaged sugar cookie mix, can frosting, peppermint extract and some peppermint crunch. Simple!
Shopping List
1 package sugar cookie mix
1 egg
1 stick butter, softened (not melted)
1 teaspoon peppermint extract
red food coloring
Vanilla Frosting
Peppermint crunch (or crushed candy canes will work too)
Preheat oven to 375 degrees.
In a medium bowl, combine cookie mix, egg and butter with spoon until dough forms. (dough will be sticky…not super smooth like a cake mix) Once dough forms, add in extract and food coloring until combined.
Drop dough by tablespoon fulls onto greased baking sheet. Bake 8-9 minutes. Cool on cooling rack. Once cooled, spread frosting over each cookie and top with peppermint crunch.
So simple, right?!? And come on…you can mix and match this a million different ways (change up the extracts, food coloring, frosting flavors, toppings…). If peppermint isn’t your thing, make this your own. Change it up to make you happy this cookie season.

Okay, so we're going to our friends annual cookie exchange this weekend and I am making a completely new cookie. I'm actally using the 'base' from a recipe I found online (white chocolate, cherry shortbread cookies). But instead of following that VERY involved recipe I'm using your mix and match method for cake cookies to make it a little simpler. I hope they turn out good!!!
