When I first met my husband, he lived by himself in a small apartment in Manhattan, Kansas. He didn’t have any money, so he had to carefully plan out his food budget which meant, he ate the same thing every week. He always had Taco Tuesdays and as we dated, I began to have Taco Tuesdays too.
Here is my disclaimer…this is not some groundbreaking recipe. This isn’t even a recipe. This is just a dinner we still prepare 10 years later at our house on occasion when we need something quick and yummy with little effort. Sometimes my grandmother will call me when she needs an idea for dinner that night (she’s usually calling me at 4:45 PM) and I have to come up with something that she has the ingredients to and can make in 15 minutes…this would be something I’d tell her to make. Make these on a Tuesday and think of us :).
Shopping List
1 pound ground beef
1 can Bush’s chili beans (we use mild but you use whatever you like)
Taco Sauce (my husband swears it’s better than actual salsa but if you prefer salsa, you go right ahead)
Romain lettuce, shredded
Crunchy Taco Shells
Cheddar cheese, sour cream, guacamole to garnish
In a skillet over medium-high heat, brown ground beef. Once brown, add in chili beans and mash them in with the ground beef mixture with the back of a fork until it’s all combined together (crazy but good!).
Assemble your tacos (we eat them “salad style”) with romaine, ground beef, taco sauce, cheese and other toppings. Add in crunched up pieces of taco shell (or tortilla chips if you’re feeling really lazy) and there you go.
I know…did I even need to blog such a simple meal? Yes. We eat it at our house, so I share it with you. That’s what I do. 🙂

You should try my sisters taco salad sauce of half cup Ortega taco sauce ( I like medium) and half a cup western French dressing. Has just the right amount of spice and sweetness. And crumble some nacho cheese Doritos. Mix with lettuce shredded cheddar cheese and grape tomatoes. You can add in some beans if u like.
