Don’t turn your nose up yet! Fish tacos sound funny but they’re really, really yummy. Being a Tex-Mex girl, I see them on menus at Mexican restaurants all the time. They’re the perfect way to enjoy a nice light taco without much guilt. And bonus, they’re super simple.
Shopping List
4 tilapia fillets
4 tablespoons lemon-pepper seasoning
juice of 1 lemon
1 red onion, chopped
flour, corn or wheat tortillas
Salsa and/or sour cream to garnish
Season each tilapia fillet generously with lemon-pepper seasoning. Grill fish over medium-high heat on an outside grill (or on a grill pan on your stove) for about 5 minutes each side. Squeeze the juice of one lemon down over the tops of the cooked fish. Roughly chop fish and assemble in your tortilla with sliced red onion.
That’s it! Done! How simple was that? Full of flavor, healthy, light…a great way to eat a taco.

Yes! We have fish tacos at least 2-3 times a month during the summer. And I agree, they need little more than some fresh guacamole, lemon, and maybe a simple salsa. And of course some sweet corn on the side!

As for sides, you could do black beans, a Mexican style rice, corn on the cobb, a green salad with avocado or a roasted veggie would be good too! Enjoy!
