My mom is famous for this corn salad. Famous. We rarely have a pool party or other outdoor event without it. It’s super simple, takes no time, requires no cooking and can be made way in advance. All the things you need in a summer side dish. One thing though…this salad contains mayonnaise. I’m not sure if you’ve noticed or not, but to date, I have never posted a recipe using mayo. I hate mayo. There are only two things I don’t eat…tuna and mayo. Period. However, that being said, I’m in love with this salad and just close my eyes when I add the mayo in…then I pretend it’s not in there when I eat a huge serving. This salad rocks :). Thanks Mom!
2 (15 oz) cans corn, drained
2 cups cheddar cheese, grated
1 cup mayonnaise
1 green bell pepper, chopped
1 red onion, chopped
1 (10 oz bag) Chili-Cheese Frito’s
In a large bowl, mix the first 5 ingredients together, cover and chill until ready to serve. Toss Frito’s in right before serving.
That’s it. Done. Finished. Simple.
