My friend Erika and I joke that during the fall, we consume a fair share of canned cream of anything soup (chicken, mushroom…you name it, we’re eating it). Nothing says comfort quite like a dish made with a creamy soup. When fall time comes and life gets busy, it’s good to have a few handy things in your cabinet and freezer for a quick weeknight meal. Here you go…my favorite things to keep on hand for fall…
1. A can of Rotel tomatoes.
2. One (or two!) cans of cream of chicken and/or mushroom soup.
3. Frozen chopped spinach.
4. A box of penne pasta.
5. Tortillas (keep them in the freezer and then just microwave them a minute before you need them…they’ll stay really fresh while in the freezer.
6. A can of blackbeans.
7. A can of Crescent Rolls.
8. Velveeta Cheese
9. A jar of spaghetti sauce

I know this list seems simple but in a pinch, you could create several meals using these ingredients. You have the start ups for some soups, quesadillas, tacos, pasta, Mexican pizzas…I could go on and on. You just need some protein (like ground beef or chicken) and maybe some more cheese (because you just can’t have enough of that!) and dinner is done.

GREAT tips!!!! And I too am a lover of the cream soup. They make everything better. Good idea about the tortillas. I am always throwing away hard tortillas. No more.
