“This is the best spinach dip I’ve ever had.” said a Spinach Dip Expert!
Yes, I know a spinach dip expert…in fact, I know several of them. My girlfriends and I are experts on two things…Pigs in a Blanket and Spinach Dip. We serve both at almost every gathering (and we gather a lot!). I whipped up this simple slow cooker spinach dip in no time and my girlfriends raved. Several of them said it was their all-time favorite…quite the compliment because I know they have tasted their fair share. Loved this dip! Loved it! Easy, easy, easy and yummy, yummy, yummy. I found this recipe in my Quick and Easy Christmas cookbook by Gooseberry Patch…and I couldn’t agree more…this would taste perfect with any Christmas celebration.
Shopping List
2 (10 oz) packages of frozen spinach, thawed and all excess water squeezed out
1 (16 oz) Pepper Jack Velveeta (or Jalepeno Velveeta)
1 can cream of mushroom soup
1 (3 oz) package cream cheese
1 tablespoon garlic powder
In your slow cooker, combine all ingredients, cover and cook on low 3-4 hours or on high about one hour. Stir a few times during the cooking process. Serve with your favorite tortilla chips.
Do you see how simple this is? I love a great dip that I can just ignore all day. Fabulous!

The pepper jack Velveeta is on the Mexican aisle of my grocery store but I've also seen it at Walmart and Target. You could use regular velveeta with some chopped up jalepenos and a can of chopped green chiles. Good luck!

I don't think I've ever seen a 3-oz package of cream cheese–I've only seen 8 or 16 oz. Just want to make sure that isn't a typo before I go to the store tonight and try to buy 3 oz!

3 ounce cream cheese is sold right next to the 8 ounce boxes. Philadelphia makes one that is wrapped in foil. You should see it right there!

My husband hates mushrooms. What would you recommend I use in place of the cream of mushroom soup? Cream of onion? Cream of chicken?

It needs to be Velveeta so that it melts easily and creamy. Enjoy!

Is this super spicy? or would it be the equivalent of queso spicy when combining velveeta and rotel. Would love an amped up flavor but my family can't handle too much heat!

It's not super spicy. It's very similar to the basic Velveeta-Rotel queso :).
