Mistletoe and mint? That sounds like Christmas magic to me! These little cakes taste like the white-chocolate and peppermint Hershey Kisses you find in stores this time of year. A little green just makes them more fun and festive. I made mine mini cakes but of course you could just make one standard size bundt cake.
Everything should be more festive during the holidays!
Shopping List
1 box of white cake mix
2 small boxes of instant vanilla pudding
1/2 cup of veggie oil
1 1/4 cups water
4 eggs
4 teaspoons peppermint extract, divided
1 cup white chocolate chips
1 can vanilla frosting
Green food coloring
Red sprinkles
Preheat oven to 350 degrees
Grease (I use Pam) a 10 inch bundt pan or 12 mini bundt pans.
In mixing bowl, combine cake mix, puddings, oil, water, eggs, and 2 teaspoons extract with electric mixer. Mix in a few drops of green food coloring. Stir in white chocolate chips. Pour into prepared bundt pan.
Bake 40-45 minutes or until toothpick inserted comes out clean for a large bundt cake or 16 to 18 minutes for mini cakes.
Let cake rest on counter in pan 10 minutes. Then, invert cake onto serving plate to finish cooling.
To make the frosting, stir remaining 2 teaspoons of extract into the container of vanilla frosting along with a little green food coloring. Frost cake and add red sprinkles.

You can use either mint or peppermint extract in this :). Same results!
